- 1 c. butter
- 1 c. sugar
- 5 eggs
- 1 1/3 c. flour
- 1 1/2 tsp. baking powder
- 1/4 c. pineapple juice
- 3 lb. mixed candied fruit
- 2/3 c. flour
- 1 c. crushed pineapple, drained
- 1/2 lb. shredded coconut
- 1/2 lb. blanched almonds
Directions

1Cream butter and sugar until light and fluffy.

2Add eggs, one at a time.

3Sift together flour and baking powder and add alternately with pineapple juice.

4Dredge fruit with flour.

5Add to cake mixture and mix well.

6Bake at 275° for 2 hours or until done.

7Makes 2 loaf pans or 1 tube pan.

8Refrigerate.

9May be wrapped in wine soaked cheesecloth when cooled.
