  • 1 1/2 cup A.p flour
  • 1 1/2 tsp Baking pwdr
  • 1/4 tsp Salt
  • 2 large Eggs
  • 2/3 cup Sugar
  • 3/4 cup Unsalted Butter melted
  • 2 tsp Vanilla extract
  • 1/2 cup Milk
  • 10 oz Crushed pineapple

    Preheat oven to 350

    Whisk flour, bk.

    Pwdr, salt together.

    In another bowl best eggs and sugar until light and fluffy (bout 2 min)..

    While beating, add butter and vanilla.

    While mixing slowly, add half of dry ingredients, then all the milk, followed by the rest of dry ingredients.

    Add (drained-save juice) crushed pineapple and stir in.

    take care not to over mix.

    Fill cupcake pan with liners or pan spray.

    Fill 1/2 -3/4 of the way full.

    Bake at 350 for 20-25 mins untill tooth pick comes out clean.
