- 8 tablespoons (1 stick) butter
- 1/2 cup all-purpose flour
- 1 to 2 teaspoons salt
- 1/2 to 3/4 teaspoon pepper
- 4 cups milk
- 1/4 cup chopped fresh parsley or chives (optional)
Directions

1Melt butter; remove from heat.

2Stir in flour; add salt and pepper.

3Return to heat and cook, stirring constantly, until mixture is bubbly.

4Add milk, 1 cup at a time.

5Bring to a boil over medium heat, stirring frequently.

6Reduce heat and simmer 1 to 2 minutes, then let stand at least 1 to 2 minutes.

7Stir in parsley or chives, if desired.
