- 1 (2 kg) whole boned snapper (head and tail intact)
- 1/2 packet butter
- Coriander
- Dill
- Toasted pine nuts
- Lemon wedges
- Sea salt and pepper
Directions

1Slice the butter and lemon.

2Open the fish and season with salt and pepper.

3Put the butter, herbs, lemon and pine nuts inside the fish.

4Fold the fish over to cover the stuffing.

5Place the fish on a tray lined with baking paper and cook for 5 to 10 minutes.

6Place fish onto the platter and pour butter over the fish.

7Spoon Avocado Salad onto the plate.
