  • 1 (2 kg) whole boned snapper (head and tail intact)
  • 1/2 packet butter
  • Coriander
  • Dill
  • Toasted pine nuts
  • Lemon wedges
  • Sea salt and pepper

Directions

    Slice the butter and lemon.

    Open the fish and season with salt and pepper.

    Put the butter, herbs, lemon and pine nuts inside the fish.

    Fold the fish over to cover the stuffing.

    Place the fish on a tray lined with baking paper and cook for 5 to 10 minutes.

    Place fish onto the platter and pour butter over the fish.

    Spoon Avocado Salad onto the plate.
