- meat from 1 chicken
- 3 c. diced celery
- 1 c. diced sweet pepper
- 2 c. rice
- 1 can sliced water chestnuts
- 1 stick or less oleo
- 1/2 c. diced onion
- 2 cans cream of mushroom soup
- 1/2 lb. Cheddar cheese
- chopped pimentos (you can add for color if you want)
Directions

1Put celery, pepper and onion in melted oleo in a skillet.

2Cook until almost done.

3Cook 2 cups rice which will make 4 cups cooked rice.

4Mix chicken, rice, soup and cooked items together.

5Bake 35 to 40 minutes at 350°.

6The last 10 minutes, put cheese on top; bake until melted and a little brown on top.
