Ingredients

  • meat from 1 chicken
  • 3 c. diced celery
  • 1 c. diced sweet pepper
  • 2 c. rice
  • 1 can sliced water chestnuts
  • 1 stick or less oleo
  • 1/2 c. diced onion
  • 2 cans cream of mushroom soup
  • 1/2 lb. Cheddar cheese
  • chopped pimentos (you can add for color if you want)

Directions

    Put celery, pepper and onion in melted oleo in a skillet.

    Cook until almost done.

    Cook 2 cups rice which will make 4 cups cooked rice.

    Mix chicken, rice, soup and cooked items together.

    Bake 35 to 40 minutes at 350°.

    The last 10 minutes, put cheese on top; bake until melted and a little brown on top.
