Whole Wheat Rolls

Ingredients
- 1 pkg. active dry yeast
- 1/2 c. water
- 1 tsp. sugar
- 1 c. milk, scalded
- 1/3 c. melted shortening
- 1 1/2 c. sugar
- 2 tsp. salt
- 1 beaten egg
- 4 1/2 to 5 c. flour (I use 2 c. whole wheat and the rest white)
Directions

1Soften active dry yeast in warm water at 110°.

2Add 1 teaspoon sugar to yeast mixture.

3Combine shortening, sugar and salt.

4Add scalded milk.

5Cool to lukewarm.

6Add beaten egg.

7Add 2 cups whole wheat flour.

8Beat until flour is moistened.

9Add remaining white flour.

10If using electric dough hooks, beat 4 minutes.

11If kneading by hand, knead on lightly floured surface until smooth and elastic. Place in greased bowl, turning once to grease surface and cover. Let rise until double.

12Shape rolls.

13Let rise until double again. Bake in 375° oven about 15 minutes or until golden brown.

14Can be put into refrigerator immediately after mixing for 1/2 day or more, before making into rolls.
