Directions

1Place prepared duck in roaster with about 1-inch of water in pan.

2Salt and pepper duck; add one small onion.

3Cook, uncovered, for 2 1/2 hours at 375°, basting often.

4Drain off fat and add enough cornstarch to drippings to make gravy to the consistency to which you like it.
