  • 1 pound Lean Ground Beef
  • 3 stalks Celery, Chopped
  • 1 whole Onion, Large
  • 1/2 pounds Fresh Mushrooms, Sliced
  • 1 whole Red Pepper Chopped
  • 2 Tablespoons Oil, For Sauteeing Vegetables
  • 1- 1/2 cup Wild Rice
  • 4 cups Chicken Broth
  • 13 cups Butter

    Preheat oven to 350 degrees.

    Crumble the ground beef into a large skillet and brown.

    Drain off fat.

    Transfer the meat to a 3-quart casserole.

    In the same skillet, adding as little oil as possible, saute the celery, onion, mushrooms and red pepper just until the vegetables begin to soften slightly, about 3 minutes.

    Combine the vegetables with beef.

    Add the wild rice and broth to the casserole.

    Add butter and stir entire contents to combine.

    Bake, covered, for 1 1/2 hours, stirring once or twice during baking.

    Uncover during the last 15 minutes to evaporate any excess liquid and brown the top of the casserole.
