- 1 pound Lean Ground Beef
- 3 stalks Celery, Chopped
- 1 whole Onion, Large
- 1/2 pounds Fresh Mushrooms, Sliced
- 1 whole Red Pepper Chopped
- 2 Tablespoons Oil, For Sauteeing Vegetables
- 1- 1/2 cup Wild Rice
- 4 cups Chicken Broth
- 13 cups Butter
Directions

1Preheat oven to 350 degrees.

2Crumble the ground beef into a large skillet and brown.

3Drain off fat.

4Transfer the meat to a 3-quart casserole.

5In the same skillet, adding as little oil as possible, saute the celery, onion, mushrooms and red pepper just until the vegetables begin to soften slightly, about 3 minutes.

6Combine the vegetables with beef.

7Add the wild rice and broth to the casserole.

8Add butter and stir entire contents to combine.

9Bake, covered, for 1 1/2 hours, stirring once or twice during baking.

10Uncover during the last 15 minutes to evaporate any excess liquid and brown the top of the casserole.
