- 5 slices thick smoked bacon, diced
- 1 shallot, minced
- 3 tablespoons Dijon mustard
- 2 tablespoons packed light brown sugar
- 2 tablespoons apple cider vinegar
- 3 tablespoons extra virgin olive oil
- 1 lb swiss chard leaf, cut into 1-inch strips
Directions

1Cook the bacon in a skillet over medium heat, stirring frequently until brown and nearly crisp, about 4 minutes. Add the shallots and cook until soft, about one minute.

2Add the mustard, sugar and cider vinegar and cook, stirring, until the sugar is dissolved. Add the olive oil and stir well to incorporate.

3Add the chard and cook, tossing well, until it begins to wilt, about 30 seconds. Remove from heat and serve hot.
