- 3 ounces smoked bacon, sliced
- 1 tablespoon unsalted butter, plus 1 1/2 tablespoons
- 8 mushrooms, sliced
- 12 ounces baby spinach
- Salt and freshly ground black pepper
Directions

1In a small pan, cook the bacon until crispy.

2Remove from pan and set aside.

3Add 1 tablespoon of the butter in the same pan and saute the mushrooms for 1 to 2 minutes.

4Add the remaining 1 1/2 tablespoons butter and melt.

5Add the spinach and cook until it is wilted.

6Return bacon to the pan and heat through.

7Adjust seasoning, to taste, with salt and pepper.

8Keep warm until ready to serve.
