Winter Beef Stew

Ingredients

  • 4 slices thick bacon, cut into 1/4-inch pieces
  • 1 1/2 lb. lean beef (sirloin tip or round), cut into 1/2-inch pieces
  • 2 cloves finely chopped garlic
  • 1 to 2 cans beer
  • 2 c. beef bouillon
  • 2 Tbsp. ground cumin
  • 2 Tbsp. dried, crushed mint or 4 Tbsp. chopped fresh
  • 2 to 3 medium unpeeled potatoes
  • 2 to 3 carrots
  • 2 to 3 stalks celery
  • 4 to 5 small onions, turnips or rutabagas

    In a large, heavy pot saute bacon and drain grease.

    Add garlic and beef and brown.

    Add bouillon, beer, onion, mint, cumin and pepper; bring to a boil, then simmer 1 to 1 1/2 hours until meat is done (remove the onion).

    Thicken with flour and water.
