- 2 Tbsp. butter
- 2 medium onions, chopped
- 2 carrots, chopped
- 8 c. beef stock, heated
- 2 1/2 Tbsp. tomato paste
- 2 c. lentils, washed
- 1 clove garlic
- 1 Tbsp. chopped parsley
- salt and pepper
Directions

1Heat butter in large saucepan over medium heat.

2Add onions and carrots and cook 5 minutes.

3Add beef stock and tomato paste.

4Mix well and season.
-
5Stir in lentils, garlic and parsley.

6Bring to boil.
-
7Reduce heat to low and cook for 1 1/2 hours, partly covered, over low heat.
