Winter Melon Soup

Ingredients

  • 2 Tablespoons Goji Berries (Kei Chi)
  • 6 strips Solomon's Seal Rhizome (yuk Chuk)
  • 4 whole Red Dates (jujubes)
  • 1/2 pounds Pork Knuckles Or Bones, Blanched
  • 1 pound Winter Melon, Peeled And Chunked
  • 5 cloves Garlic, Peeled And Smashed
  • 1 Tablespoon Salt (or More To Taste)
  • 1/4 teaspoons Ground Black Pepper
  • 6 cups Water, Freshly Boiled (Tap Water If Boiling On Stove)

Directions

    Rinse the goji berries, Solomon's Seal and red dates. Place in pot or slow cooker. Add everything else in, including freshly boiled water.

    Turn slow cooker on to low and leave to boil for 6 hours. If boiling on stove, bring water to boil and simmer for 1 1/2 hours.

    Drink and enjoy!
