  • 1/4 c. corn meal or wheat germ
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 2 Tbsp. sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 c. cooked, mashed winter squash or pumpkin
  • 2 Tbsp. corn oil or vegetable oil
  • 1 egg
  • 1 c. low-fat milk
  • 1/2 c. chopped walnuts
  • 1/2 c. raisins or dried currants
