  • 1 large buttercup/butternut squash
  • 1 large head cauliflower
  • 2 red onions
  • 3 T olive oil
  • 3 T other vegetable oil
  • 1 T balsamic vinegar
  • 2-4 T chopped fresh sage
  • salt
  • pepper

Directions

    Clean and chop winter squash and red onion to total 4 quarts

    mix in oil vinegar, sage, salt, and pepper

    spread in single layer on shallow baking sheets

    roast @ 425 F for 10 min

    stir

    roast another 10-15 min
