Winter Vegetable Soup

Ingredients
- 4 Tbsp. vegetable oil
- 1 large onion, chopped
- 1 glove garlic, crushed
- 1/2 c. whole wheat flour
- 5 c. water or canned beef broth
- 2 c. shredded cabbage
- 4 carrots, peeled and sliced
- 1 can stewed tomatoes
- 1/2 tsp. salt
- 1/4 tsp. pepper
- small can kidney beans, drained
- 1 Tbsp. chopped parsley
Directions

1Heat oil in large pot.

2Add onion and garlic and cook until soft but not browned.

3Add flour and cook, stirring constantly, 1 to 2 minutes.

4Remove from heat; add broth slowly, stirring well, and return to heat.

5Add all the vegetables and other ingredients and simmer until vegetables are tender.

6Serve with croutons or browned slices of French bread topped with grated cheese.
