- 1 stick butter
- 1/2 c. + 2 Tbsp. flour
- 1 qt. milk
- 1 c. grated cheese (4 oz.)
- 2 small cans mushrooms
- 1/2 c. diced celery
- 2 1/2 c. cooked turkey or chicken, diced
- 3 hard-boiled eggs
- 1 large can plus 1 small can chow mein noodles
- 2 tsp. butter
Directions

1Make a roux of flour and melted butter.

2Add milk.

3Cook to thicken.

4Add cheese and remove from heat.

5Stir until cheese melts.

6Saute mushrooms and celery in 2 teaspoons butter; add to sauce.

7Add turkey or chicken meat (cooked and diced) and 2 hard-boiled eggs (diced).

8Serve on plates over the Chinese noodles.

9Garnish with slices of the 3rd egg.
