Ingredients

  • 1 stick butter
  • 1/2 c. + 2 Tbsp. flour
  • 1 qt. milk
  • 1 c. grated cheese (4 oz.)
  • 2 small cans mushrooms
  • 1/2 c. diced celery
  • 2 1/2 c. cooked turkey or chicken, diced
  • 3 hard-boiled eggs
  • 1 large can plus 1 small can chow mein noodles
  • 2 tsp. butter

Directions

    Make a roux of flour and melted butter.

    Add milk.

    Cook to thicken.

    Add cheese and remove from heat.

    Stir until cheese melts.

    Saute mushrooms and celery in 2 teaspoons butter; add to sauce.

    Add turkey or chicken meat (cooked and diced) and 2 hard-boiled eggs (diced).

    Serve on plates over the Chinese noodles.

    Garnish with slices of the 3rd egg.
