- 2 bunches scallions, trimmed
- 14 cup sake or 14 cup dry white wine
- 14 cup soy sauce
- 1 tablespoon sugar
- 1 teaspoon grated fresh ginger

1Prepare hot fire.

2Cut chicken into 1 1/2 inch cubes.

3Cut scallions into 2 inch lengths, with some green tops.

4Thread 3 or 4 pieces of chicken onto 12 skewers, alternating with pieces of scallion.

5In a small bowl, mix together remaining ingredients.

6Place skewers on an oiled grill and brush with soy mixture, turning occasionally, until chicken is white through, 5-7 minutes.
