  • 1 lb chicken breast (boneless, skinless)
  • 2 bunches scallions, trimmed
  • 14 cup sake or 14 cup dry white wine
  • 14 cup soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon grated fresh ginger

    Prepare hot fire.

    Cut chicken into 1 1/2 inch cubes.

    Cut scallions into 2 inch lengths, with some green tops.

    Thread 3 or 4 pieces of chicken onto 12 skewers, alternating with pieces of scallion.

    In a small bowl, mix together remaining ingredients.

    Place skewers on an oiled grill and brush with soy mixture, turning occasionally, until chicken is white through, 5-7 minutes.
