- 2 c. cooked cubed beets
- 1/3 c. sugar
- 2 tsp. cornstarch
- pinch of salt
- 1/3 c. vinegar
- 1/4 c. orange juice
- 1 1/2 Tbsp. butter or margarine
Directions

1Drain beets.

2Combine sugar, cornstarch and salt in saucepan. Add and stir in vinegar and orange juice.

3Place over medium heat and cook, stirring constantly, until the mixture comes to a boil and thickens and becomes clear.

4Stir in beets and butter; heat thoroughly.

5Yields 4 servings.
