Yam Apple Hash

  • 1 lb. scrubbed, peeled yams
  • 1 1/2 c. water
  • 2 Tbsp. butter
  • 1 Tbsp. brown sugar
  • 1 lb. tart peeled apples, cored and cut in sixths
  • 1 Tbsp. lemon juice
  • pinch of ground nutmeg

Directions

    Place yams in a medium saucepan with 1 1/2 cups of water. Cover and bring to a boil.

    Reduce heat and cook for 40 minutes until yams feel done.

    Drain yams and rinse out pan.
  4. 4
    Place apples in the pan with 3 tablespoons of water.

    Cover and cook for 3 minutes until barely done.

    Remove pan from heat and mash apples with a fork.

    Mash yams, butter and lemon juice.

    Add sugar and nutmeg.

    Stir in apple mixture.

    Mix well and serve.
