Yam Apple Hash

Ingredients
- 1 lb. scrubbed, peeled yams
- 1 1/2 c. water
- 2 Tbsp. butter
- 1 Tbsp. brown sugar
- 1 lb. tart peeled apples, cored and cut in sixths
- 1 Tbsp. lemon juice
- pinch of ground nutmeg
Directions

1Place yams in a medium saucepan with 1 1/2 cups of water. Cover and bring to a boil.

2Reduce heat and cook for 40 minutes until yams feel done.

3Drain yams and rinse out pan.

4Place apples in the pan with 3 tablespoons of water.

5Cover and cook for 3 minutes until barely done.
-
6Remove pan from heat and mash apples with a fork.

7Mash yams, butter and lemon juice.
-
8Add sugar and nutmeg.

9Stir in apple mixture.
-
10Mix well and serve.
