Ingredients
- 2 pounds yams or sweet potatoes
- 2 tablespoons olive oil
- Salt and ground pepper to taste
- 1/2 cup honey, preferably clover honey
- 1/2 cup (1 stick) unsalted butter
Directions

1Preheat oven to 375F.

2Rub yams or sweet potatoes with oil, then sprinkle with salt and pepper.

3Wrap each separately in aluminum foil and roast in oven for 1 1/2 hours.

4Transfer to a plate and let rest just until cool enough to handle.

5Peel skin off yams and place yams in a bowl.

6Add honey and butter and mash with a fork; butter should melt completely.

7Yams can be reheated in an oven or microwave if necessary.

8Taste and season with salt and pepper.

9Serve immediately.
