- 2 c. shredded, unpeeled apples
- 1 1/3 c. brown sugar
- 1 c. chopped cranberries
- 1 c. shredded carrots
- 1 c. chopped pecans
- 2 1/2 c. flour
- 1 Tbsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 1 tsp. allspice
- 2 eggs, lightly beaten
- 1/2 c. vegetable oil
Directions

1In a large mixing bowl, combine apples and sugar.

2Gently fold in cranberries, carrots and nuts.

3Combine dry ingredients and add to mixing bowl.

4Mix well to moisten.

5Combine eggs and oil.

6Stir into apple mixture.

7Fill 18 greased muffin pans 2/3 full.

8Bake 20 to 25 minutes at 375°.

9Cool 5 minutes before removing from pans.
