Yeast Potato Biscuits

  • 1 c. Crisco
  • 1 c. sugar
  • 1 c. mashed potato
  • 1 pkg. yeast and 1 tsp. sugar, dissolved in 1/2 c. warm water
  • 8 c. flour
  • 2 tsp. salt
  • 4 eggs
  • 1 1/2 c. water

    Mix in order given.

    Let stand overnight in a large bowl. This will double in size until morning.

    Knead in flour until a nice texture.

    Roll 1/4-inch thick.

    Cut with biscuit cutter.

    Let rise about 2 hours, until double in size.

    Grease pans.

    Bake at 325° for 10 minutes, until light brown.
