  • 1 c. yellow corn meal
  • 1 1/4 c. all purpose flour
  • 1/4 c. sugar
  • 1 teaspoon baking pwdr
  • 1/4 teaspoon baking soda
  • 2 Large eggs
  • 6 Tbsp. butter
  • 1 teaspoon vegetable oil (for pan)
  • healthy pinch of salt

    Prepare oven to 350F.

    Combine cornmeal, flour, sugar, baking pwdr and baking soda and salt.

    In a separate bowl, mix buttermilk with egg.

    Beat lightly.

    Slowly stir buttermilk mix into the dry ingredients.

    Add in butter and beat for 1 minute.

    Bake 20-25 min in a 8x8 inch greased baking pan.

    Cut into squares.
