  • 2 lbs yellow squash, sliced
  • 1 cup chopped onion
  • 1 cup water
  • 12 teaspoon salt
  • 14 cup butter
  • pepper

Directions

    Combine first 4 ingredients in a large saucepan and bring to a boil.

    Reduce heat to medium; cook, uncovered, 15 to 20 minutes or until squash is tender, stirring frequently.

    Drain well in a colander; transfer to a bowl, and use a potato masher to mash coarsely with butter and pepper.
