- 2 lb. fresh yellow squash, sliced
- 1/2 c. butter
- 1 (8 oz.) pkg. Pepperidge Farm herbed stuffing mix, divided
- 1 (10 3/4 oz.) can cream of chicken soup (undiluted)
- 1 c. dairy sour cream
- 5 green onions, chopped
- 1/2 c. chopped celery
- 1 carrot, grated
Directions

1Boil squash until tender.

2Drain.

3Melt butter in skillet. Stir in 4 ounces stuffing mix.

4Add soup, sour cream, green onions, celery and carrot, stirring to mix.

5Add drained squash. Place in a 2-quart baking dish.

6Top with remaining stuffing mix. Cover and bake in preheated 350° oven for 45 minutes or until brown.

7Freezes well.
