- 3 yellow summer squash (about 1 1/4 lb.)
- 1/4 c. olive oil
- 2 whole cloves garlic, peeled and left whole
- salt and fresh ground pepper to taste
- 1 tsp. dried oregano
- 1/4 c. freshly grated Parmesan cheese
Directions

1Trim off ends of squash and cut into thin rounds, about 6 cups.

2Heat oil in large, heavy skillet.

3Add squash, shaking skillet and redistributing squash rounds.

4Add garlic, salt and pepper and cook over high heat about 4 minutes.

5Sprinkle with oregano and toss to blend.

6Remove garlic.
