Yogurt Pound Cake

- 1 c. butter, softened
- 1 1/2 c. sugar
- 3 eggs
- 2 1/4 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. grated lemon rind
- 1 tsp. vanilla extract
- 1 (8 oz.) carton peach yogurt
- powdered sugar
Directions

1Cream butter; gradually add sugar, beating until mixture is light and fluffy.

2Add eggs, one at a time, beating after each addition.

3Combine flour, soda and salt; add to creamed mixture, mixing just until blended.

4Add lemon rind, vanilla and yogurt. Pour batter into a greased and floured 10-inch Bundt pan.

5Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean.

6Cool in pan 15 minutes; remove from pan and cool completely on a rack.

7This cake is so moist and delicious all you need do is dust the top with powdered sugar.

8Yields 1 (10-inch) cake.
