- 1 12 cups all-purpose flour
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 2 large eggs, separated
- 1 cup plain nonfat yogurt
- 1 cup milk
- 3 tablespoons butter, melted
Directions

1Preheat waffle iron and spray lightly with oil.

2In a large bowl, combine dry ingredients (flour through salt).

3In a medium bowl, beat egg whites until peaks form.

4In another medium bowl, beat egg yolks until lemon-colored.

5Add yogurt to egg yolks and mix.

6Add yolk mixture to dry ingredients, along with milk and melted butter.

7Fold egg whites into batter.

8Pour 3/4 cup batter onto hot waffle iron, close lid and bake until steam stops and waffle is lightly browned and crisp, 3 to 4 minutes.

9Remove waffle and repeat with remaining batter.
