  • Fat from Roast
  • Batter-
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 1 cup milk
  • 2 eggs

Directions

    Roast comes out of oven to rest (potatoes may still need some time to crisp up)

    -Raise oven temp to 425.

    -Heat pans (I use two metal 9x13) with fat-should be enough to cover the bottom of the pan.

    -Pour batter into pans and bake 25-30 min or till puffy and crisp.

    -Mix all ing. with hand beater till smooth.

    *I usually triple this recipe and divide evenly between the 2 9x13 pans. (Maybe quad it---can't remember---this recipe is for a 9x9 pan. We like ours crisper than it is supposed to be so not so much batter-each to his own liking.
