Ingredients

  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1 1/2 tsp. dried oregano
  • 1 1/2 tsp. dried basil
  • 1 yellow onion, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 2 cloves garlic, minced
  • 1 1/2 c. carrots, sliced or chopped
  • 2 tsp. paprika
  • 1/2 tsp. cayenne pepper
  • 2 Tbsp. chili powder
  • 1/2 tsp. original Mrs. Dash
  • 1 1/2 c. canned crushed tomatoes (salt-free), juice reserved
  • 2 fresh jalapeno peppers, minced and seeds removed
  • 1/2 c. plain nonfat yogurt
  • 2 fresh tomatoes, chopped

Directions

    In a small skillet over medium heat, toast cumin seed, oregano, basil and Mrs. Dash shaking pan occasionally until fragrant, 5 to 10 minutes.

    Remove from heat.

    In skillet over medium-high heat, heat oil very hot.

    Add onion, peppers, carrots, garlic, toasted herbs, paprika, cayenne and chili powder.

    Saute 10 to 15 minutes. Add canned tomato and some tomato juice and jalapeno peppers. Bring to a boil.

    Add beans.

    Continue to simmer.

    Add fresh tomatoes.

    Heat.

    Top with yogurt.
