- 2 cups chickpeas (garbanzo beans) cooked, 1 pound
- 13 cup water
- 1 tablespoon flour, unbleached all-purpose
- 1/2 teaspoon baking soda
- 1 each eggs beaten
- 2 tablespoons parsley leaves chopped
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin ground
- 1/2 teaspoon turmeric ground
- 1/4 teaspoon basil dried
- 1/4 teaspoon marjoram dried
- 8 each pita bread rounds
- 1/2 cup onions chopped
- 1 each tomatoes diced
- 1 cup lettuce shredded
Directions

1Grind the chickpeas through the coarse blade of a meat grinder or in the container of a food processor.

2Add the remaining ingredients, with the exception of the last 6 ingredients.

3Mix well.

4The mixture will be soft.

5Preheat the oven, form the mixture into 1 inch balls, coat with the flour and fry, in a basket, four or five at a time, in the hot oil.

6The balls rise to the surface and are light brown when cooked.

7This takes about 2 minutes.

8Drain on paper towels.

9Serve in whole wheat pita halves with chopped onion, tomato, and shredded lettuce.
