Yummy Rice Pizza

  • 3 1/3 c. uncooked rice
  • 6 2/3 c. water
  • 7 eggs, beaten
  • 2 3/4 lb. Mozzarella cheese, grated
  • 4 lb. ground beef, fried
  • 4 c. spaghetti sauce
  • oregano (optional) as desired

Directions

    Combine rice and water; cook until done or water is absorbed. Fold in eggs and 3/4 pound grated cheese.

    Pat into a greased 9 x 13-inch pan and bake at 450° for 15 minutes or until firm and set. Remove from oven and top with ground beef.

    Cover with spaghetti sauce and sprinkle 2 pounds grated cheese on top.

    Sprinkle with oregano.

    Return to oven.

    Bake at 350° for an additional 20 minutes.
