- 1 pound, 1-2/3 ounces, weight All-purpose Flour
- 5/8 ounces, weight Granulated Sugar
- 1 whole Egg
- 1-7/8 ounces, weight Fresh Yeast
- 14 tablespoons, 1-1/2 teaspoons, 2 pinches Water
- 3 tablespoons, 1 teaspoon, 2-1/3 pinches Milk
- 3/8 ounces, weight Salt
- 1 ounces, weight Butter
- 1/2 pounds, 7/8 ounces, weight Dark Brown Sugar
- 4 Tablespoons Cinnamon
Directions

1Preheat the oven to 225°C.

2In a large bowl, mix together the flour, granulated sugar, egg and yeast using your hands or a mixer. Then add the water, milk and salt. Knead 6 minutes by hand or machine. Then add the butter and knead for another 4 minutes. Divide the dough into balls of about 80 grams each and set them on a baking tray. Let them rest for 20 minutes.

3Then roll each ball of dough into a 30 cm (1 foot) strand.

4Mix the brown sugar with the cinnamon on a baking tray. Cover the strands of dough with a little water and then roll the dough through the sugar mixture. Turn the dough strand two times around your hand and then put the end through the middle (making a knot).

5Put a sheet of parchment paper on a baking tray and place the knots onto the baking tray. Let them rise for 5 minutes. Then put the tray into the preheated oven and bake for 8 minutes. When done, place them upside down on a large rack or tray and let them cool.
