  • 1 1/2 cup Chopped Onion
  • 2 cup Organic Vegetable Broth
  • 1 cup Diced Yukon Gold Potato
  • 1/2 tsp Salt
  • 1/4 tsp Freshly Ground Black Pepper
  • 1 packages Baby Spinach
  • 1/2 cup Reduced Fat Sour Cream
  • 1 tsp Grated Lemon Rind

    Heat oil in saucepan over medium heat.

    Add onion; saute 3 min.

    Add broth and next.3.ingredients.

    Cover & boil high heat; reduce heat & simmer 8 min.

    Add spinach; cover and cook 2 min.

    Place half of soup and 1/4 cup sour cream in blender.

    Pour into large howl.

    Repeat procedure with remaining soup and 1/4 C sour cream.

    Pour soup evenly into 4 bowls.

    Top each with a follow of sour cream and 1/4 teaspoon lemon rind.
