- 1 cup all-purpose flour
- 14 cup granulated sugar
- 14 cup margarine, softened
- 2 tablespoons low-fat plain yogurt
- 34 cup sugar
- 2 tablespoons flour
- 14 teaspoon baking powder
- 14 teaspoon salt
- 1 egg
- 1 egg white
- 1 lemon, rind of, grated
- 14 cup lemon juice
- 2 teaspoons icing sugar
Directions

1Combine flour, sugar, margarine and yogurt in food processor or blender.

2Press evenly into lightly-greased 8-inch-square cake pan.

3Bake at 325 for 25 minutes or until golden.

4TOPPING: Combine sugar, flour, baking powder, salt, egg, egg white and lemon juice and rind in a food processor or bowl.

5Mix well.

6Pour topping over base and bake an additional 35 minutes or until top is set.

7Sift icing sugar over top when cool.
