- 2 large baking potatoes
- 1/4 c. sour cream
- 1/4 c. shredded Cheddar cheese
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 green onion, chopped
- 1 Tbsp. bacon bits
Directions

1Scrub potatoes; pierce with fork.

2Place 1 inch apart on paper towel.

3Microwave on High 10 to 12 minutes.

4Let stand 2 minutes. Cut strip from top of each potato.

5Carefully scoop out pulp, leaving shells intact.

6Mash pulp.

7Stir in sour cream and next four ingredients.

8Spoon into shells.

9Top with bacon bits and microwave on High until thoroughly heated.
