- 6 large baking potatoes
- 1/4 c. butter or margarine
- 2 to 3 tsp. hot pepper sauce
- 1/2 c. shredded Monterey Jack cheese
- 6 slices cooked bacon, crumbled
Directions

1Preheat oven to 400°.

2Thoroughly scrub potatoes with brush under cold water.

3Pat them dry.

4Prick each potato with fork. Bake 1 hour or until tender.

5In small bowl, mix together melted butter and hot pepper sauce; set aside.

6Cut each potato in half lengthwise and scoop out pulp using a spoon.

7Leave about 1/4-inch thick shell; reserve potato pulp for other use.

8Cut each potato shell lengthwise into 1-inch wide strips.

9Place potato skin strips on baking sheet.

10Broil the potato skins 3 to 4 inches from heat source for about 5 minutes or until crisp or bake in oven at 450° for 12 to 15 minutes, until crisp.

11Take out.

12Brush with butter mixture.

13Sprinkle with cheese.

14Put back into oven until cheese melts.

15Then pull out.

16Sprinkle with crumbled bacon.
