- 1 small onion, sliced
- 1 small green pepper
- 1 clove garlic, crushed
- 2 Tbsp. oil
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 tomatoes, wedged
- Parmesan cheese
Directions

1Cut zucchini into 1/4-inch slices.

2Cook and stir zucchini and remaining ingredients, except tomatoes, in a 10-inch skillet until heated through.

3Cover and cook over medium heat, stirring occasionally, until vegetables are crisp-tender (5 minutes).

4Add tomatoes.

5Cover and cook over low heat just until tomatoes are heated through (3 minutes).

6Sprinkle with snipped parsley and grated Parmesan cheese.
