- 2 (6 to 8-inch) zucchini
- 1 small onion
- 1 medium tomato
- 1 c. grated cheese (Cheddar for Colby)
- 2 Tbsp. margarine
- salt and pepper to taste
Directions

1In a 10-inch iron skillet, spread margarine on bottom and sides.

2Slice zucchini 1/4-inch thick and lay in pan.

3Slice onion on top of zucchini.

4Slice tomatoes on top of onion.

5Salt and pepper on top.

6Add enough water to almost cover.

7(If using frozen zucchini, use only a small amount of water.)

8Cover with lid.

9Cook on medium heat on top of stove until bubbles, then turn burner on low heat.

10Cook until tender.

11May need to add water before done.

12When done, add cheese.

13I serve in skillet.
