  • 1 chicken (about 2 1/2 lb.), cut in serving pieces
  • 2 Tbsp. vegetable oil
  • 1/2 tsp. salt
  • pepper to taste
  • 1/2 tsp. paprika
  • 1 small clove garlic, minced
  • 1/2 tsp. basil or oregano
  • 1 portion frozen zucchini-tomato mixture

Directions

    In an ovenproof saucepan or casserole, brown chicken pieces in oil and saute over medium heat for about 15 minutes.

    Sprinkle with salt, pepper, paprika, garlic and herbs.

    Pour zucchini-tomato mixture over chicken.

    Cover and bake in 350° oven about 30 minutes or until chicken is tender.
