- 2 lb. zucchini, diced in bite size pieces
- 1 Tbsp. salad oil
- 1/2 c. diced onion
- 3 fresh tomatoes, chopped
- 1 small can green chiles
- 1/2 tsp. salt
- pepper as desired
- dash of garlic powder
- 2/3 c. shredded Jack cheese
Directions

1Cook zucchini until tender, over medium heat.

2Drain.

3In a skillet, heat oil and saute onion.

4Add tomatoes, green chiles and seasonings; blend well.

5Cook for a few minutes over reduced heat. Add cheese; mix in well.

6Cover; heat 1 to 2 minutes.

7Serve when cheese is fully melted.

8Serves 6.
