- 6 c. zucchini, cut in 1-inch cubes (do not peel)
- 1/2 c. chopped onions
- 1 c. shredded carrots
- 2 c. Pepperidge Farm herb stuffing cubes
- 1/2 c. melted butter
- 1 c. grated sharp Cheddar cheese
- 1 can cream of mushroom soup
- 1 c. sour cream
Directions

1Boil zucchini, onions and carrots for 5 minutes.

2Drain and return to pan.

3Mix in remaining ingredients.

4Add pepper to taste.

5Spread in greased 9 x 13-inch casserole.

6Sprinkle buttered cracker crumbs on top.

7Bake at 350° for 30 to 35 minutes.
