Ingredients

  • 3 to 4 medium zucchini (about 5 c.), sliced
  • 1 stick margarine
  • 1 (16 oz.) pkg. Pepperidge Farm stuffing mix
  • 16 oz. sour cream
  • 1 can cream of mushroom soup
  • 2 c. shredded carrot
  • 1 c. chopped onion
  • black pepper to taste

Directions

    Parboil zucchini in salted water.

    Cool.

    Combine margarine and stuffing mix.

    Line 9 x 13-inch pan with 1/2 stuffing mixture. Reserve rest.

    Combine remaining ingredients.

    Add drained and cooled zucchini.

    Spread mixture over stuffing.

    Spread reserved stuffing on top.

    Bake at 350° for 40 minutes.
