- 3 to 4 medium zucchini (about 5 c.), sliced
- 1 stick margarine
- 1 (16 oz.) pkg. Pepperidge Farm stuffing mix
- 16 oz. sour cream
- 1 can cream of mushroom soup
- 2 c. shredded carrot
- 1 c. chopped onion
- black pepper to taste
Directions

1Parboil zucchini in salted water.

2Cool.

3Combine margarine and stuffing mix.

4Line 9 x 13-inch pan with 1/2 stuffing mixture. Reserve rest.

5Combine remaining ingredients.

6Add drained and cooled zucchini.

7Spread mixture over stuffing.

8Spread reserved stuffing on top.

9Bake at 350° for 40 minutes.
