- 2 c. water
- 1 onion
- 1 garlic clove
- 1/2 green pepper
- 1/2 c. celery
- 1 tomato
- 2 small zucchini
- 1 Tbsp. oil
- 1/4 tsp. Italian seasoning
- 3/4 c. grated Cheddar cheese
Directions

1Add barley to boiling salt water.

2Reduce heat and simmer for 45 minutes.

3Cook vegetables in oil until tender.

4Combine with barley. Top with cheese.

5Bake in casserole at 350° for 20 minutes.
