Zucchini Beef Soup

Ingredients

  • 1 lb. ground beef (or venison)
  • 4 celery stalks, chopped
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 cans (28 oz.) tomatoes, undrained
  • 6 medium zucchini, cubed (do not peel)
  • 4 c. water
  • 3 tsp. Italian seasoning
  • 2 tsp. salt
  • 2 tsp. beef bouillon granules
  • 1 tsp. sugar
  • pepper to taste

Directions

    In large pan, cook beef, celery, onion and green pepper over medium heat until meat is no longer pink.

    Drain if greasy.

    Stir in rest of the ingredients and spices.

    Bring to a boil, reduce heat, cover and simmer for 20-25 minutes.

    Garnish with Parmesan cheese if desired.
