- 1 medium onion
- 1/2 c. butter or margarine
- 1 1/2 lb. shredded zucchini
- 2 1/2 c. chicken stock
- 1 c. light cream
- 1/8 tsp. nutmeg
- 1/2 tsp. basil
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Saute onion and butter or margarine.

2Simmer zucchini and chicken stock for 15 minutes (covered).

3Puree 1/2 of zucchini mixture with 1/2 of onion mixture while slowly adding cream and spices.

4(Repeat with other half.)

5Serve hot or cold.

6Also great with cauliflower.
