- 1 c. salad oil
- 2 c. sugar
- 2 tsp. vanilla
- 1 tsp. soda
- 1 tsp. salt
- 3 eggs, beaten
- 2 c. grated zucchini
- 3 c. all purpose flour
- 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1 c. walnuts or pecans, chopped
Directions

1Combine oil, eggs, sugar, zucchini and vanilla, blend well. Stir in flour, soda, baking powder, salt, cinnamon.

2Stir in nuts. Spoon batter into two 8 1/2 x 4 1/2 x 2 5/8 pan.

3Bake 325° for 1 1/2 hours or muffins approximately 30 minutes.

4Yellow squach may be substituted for zucchini.
