Zucchini Bread

Ingredients

  • 3 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 1 Tbsp. vanilla
  • 3 c. grated zucchini
  • 2 c. self-rising flour
  • 1 c. chopped walnuts

Directions

    In large bowl, beat eggs, sugar, oil and vanilla until thick. Stir in grated zucchini.

    Add remaining dry ingredients and stir. Fold in the chopped nuts.

    Pour mixture into 2 oiled and floured 8 x 4-inch loaf pans.

    (May use disposable pans or nonstick.) Bake in preheated 350° oven for 55 to 60 minutes or until toothpick inserted in center comes out clean.

    Cool loaves in pans for 10 minutes.

    Invert onto rack and cool completely.

    Loaves may be frozen.

    Makes 2 loaves.
