Ingredients
- 3 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 Tbsp. vanilla
- 3 c. grated zucchini
- 2 c. self-rising flour
- 1 c. chopped walnuts
Directions

1In large bowl, beat eggs, sugar, oil and vanilla until thick. Stir in grated zucchini.

2Add remaining dry ingredients and stir. Fold in the chopped nuts.

3Pour mixture into 2 oiled and floured 8 x 4-inch loaf pans.

4(May use disposable pans or nonstick.) Bake in preheated 350° oven for 55 to 60 minutes or until toothpick inserted in center comes out clean.

5Cool loaves in pans for 10 minutes.

6Invert onto rack and cool completely.

7Loaves may be frozen.

8Makes 2 loaves.
