Ingredients
- 1 1/2 c. all-purpose flour
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 1/4 tsp. ground nutmeg
- 1 c. sugar
- 1/4 c. cooking oil
- 1 c. finely shredded, unpeeled zucchini
- 1 egg
- 1/4 tsp. finely grated lemon peel
- 1/2 c. chopped walnuts
Directions

1In mixing bowl, combine flour, cinnamon, baking soda, salt, baking powder and nutmeg.

2In another mixing bowl, combine sugar, shredded zucchini, cooking oil, egg and lemon peel.

3Mix well. Add flour mixture; stir just until combined.

4Stir in chopped walnuts.

5Pour batter into greased 8 x 4 x 2-inch loaf pan.

6Bake in 350° oven for 55 to 60 minutes.

7Cool on wire rack for 10 minutes.

8Remove from pan and cool on wire rack.
